Did I mention I like salads ?
Yesterday I made a new salad as a side dish to Harry's beer-can chicken. It was SO GOOD I just had to pass it along. It's also very nutritious -- high in protein, omega-3, and anti-oxidents yet low in fat.
Edamame Avacado Salad
2 medium-sized avocado, diced into bite-sized pieces
1-1/2 cup halved cherry or grape tomatoes
2 cups shelled, cooked edamame beans
1/4 cup finely diced red onion

To keep your avacodo from browning, keep in a dish of cold water until ready to combine the salad and dressing.
Dressing: (any vinaigrette will do)
Combine and stir until sugar is dissolved:
2 Tbsp lime juice
1 Tbsp Balsamic Vinegar
1/2 tsp sugar
Slowly add 1 Tbsp Olive oil and stir until well incorporated.
Toss the vegetable together with dressing. Chill up to 1 hour before serving if you like a cold salad.
Mmmmm ..... so yummy!

We're having so much fun with Veda. She and Fargo are becoming fast friends and keeping each other entertained.
I think she's got the house training down -- no accidents for the last 2 days. She's walking very nicely on a regular leash. We're working on the "stay" and "down" commands. ("down" meaning 'lie down' as opposed to "off" meaning 'get off'!)
Anyway, here's some video and a few pictures for you. The video quality isn't perfect because I had to film it from the kitchen window. If I went outside, the dogs would stop playing and just run up to me!! They love running around in the snow -- Fargo's tail never stops wagging!

Ditto
Spring. Such a refreshing time of year.
All the snow from April 2nd melted and this past week has been sunny and warm. :-)
I even hung all my laundry outside 2 days ago. :-)
And a sweater has been the only "coat" I've needed to wear. :-)
You'd think I could have titled this ... "And now for something completely different"! But alas, with a sigh, I cannot. This was what I woke to this morning ...

"Wonder"-land?
April 2, 2011: If this were yesterday I would think this was an April Fool's joke. But since this is what I woke to this morning, I just have to wonder ...
Taken at 9:00 a.m. - 4.5 inches on the ground. It's now 10:00 and another inch has fallen. It may be a looong day.
